For you uninitiated in the fine art of the holy food of Barbecue, I am writing to enlighten you on the subject. Unfortunately, there is some bad information out there from the very people who should know better: the companies that manufacture so called Backyard Barbecye Grills.

First, there is a major difference between “Grilling” and “Barbecuing”. Grilling uses higher heat to cook the meat in a short time (under one hour). Barbecuing uses low heat to cook the meat over a long time (usually overnight). Barbecuing basically smokes the meat.

Although you can Barbecue many types of meat, most fine quality barbecue comes from use of Pork. Mutton BBQ is also great but not as common. Beef and chicken and other meats can be used but are not as good in the opinion of most true connoisseurs of BBQ.

True Barbecue cooks prefer to cook over wood rather than gas or briquettes. A number of types of wood can be used. Each type of wood gives its own distinct flavor to the meat.

Other than the smoke flavor added in the cooking process, there are two primary ways to add flavors to the meat.
1. No sauce or just a minimum of spices.
2. BBQ sauce (not the commercial stuff as smoke flavor additives)
3. Dry rub

Which wood is used and what kinds of additional spices are used very much depends of the location. While BBQ is available in a lot of the world and all 50 states, in the US, there are four primary BBQ centers.

1. Lexington, North Carolina: This barbecue is usually made for the pork shoulder served with a mild to spicy tomato-based sauce applied to the meat after it is plated. Hickory is the preferred wood.

2. Memphis, Tennessee: Although others may disagree, Memphis is the world capital of barbecue. But even in Memphis there are differences. Most Memphis BBQ is of the dry rub variety with tomato-based sauce available. Normally, it is pulled BBQ served on a hamburger bun with coleslaw. This is said to be the appropriate way for BBQ to be served although, personally, I like Memphis wet ribs too.

3. Texas: Texans use oak, mesquite, or pecan to add flavor. Texans are more inclined to not use any sauce. However, if used, the sauce usually is a sweet sauce that is vinegar and tomato based.

4. Kansas City: Kansas City barbecue cooks usually prefer to use brisket (Beef) although pork is also common. They tend to slice the meat rather than pull it. The sauce is generously applied right after cutting the meat and is a sweet, tomato based sauce. The sauce is made sweet with molasses.

I hope this has enlightened you who still think that what you do on your backyard grills is called barbecue Razz

I use the old fashion Webber, with mesquite coals. Am I a wannabe barbequer or what? Laughing

I ordered take out from Applebees tonight, the Honey Barbequed Baby Back Ribs, they were pretty good, not as good as mine though, Crying or Very sad

sodapop, honey is a knockoff version of Kansas City BBQ: It is good but not as good as the original (in my humble opinion).

You read all of that looong post but missed the first part Laughing. Webber is grilling not barbecuing Very Happy.

Wash your mouth out Jim. : Wink : That's like telling kids there's no Santa.. Saying to friends - come round for a grill - just doesn't sound right. Us Aussies love our barbies. I couldn't imagine Andrew saying he was going to have a grill Laughing Correct or not - I'm sticking to Barbie.. (not the doll type either Smile ).
Smells: put an onion on the barbie (grill) and you'll have all the neighbours jealous - you don't have to cook anything else and everyone thinks you're having a delicious meal.
